Mixed Vegetables in coconut milk |
Ingredients :
cinnamon : 1 inch
green cardamom -4
oil- 1 tbsp
cloves -4
curry leaves-5-7
black pepper -1/2 tsp
salt-to taste
ginger garlic paste- 1/2 tsp
green chilly-1
onions - 1/2
potato -1 medium
beans -1 cup
carrots -1 cup
peas -1/2 cup
coriander- for garnish
coconut milk-100 ml
vegetables |
Serves - 4 persons
Cooking time - 15 minutes
Method -
Slice the onion finely. chop the beans & carrots as shown above. Also cut the potato in small cubes.
If you have time instead of the ginger garlic paste, chopped ginger garlic can be used.
Heat oil in pan and add the cinnamon ,cardamom & cloves.Now add the green chilly,curry leaves & onions.
Stir well.Let this cook for another 3 minutes.Now add the potato, peas ,beans, carrots & potato. Let this cook for 2-3 minutes .Add 1/2 cup of water and let this cook,till the vegetables are cooked.
The best way to check is to check a potato piece, if it is tender then the vegetables are cooked.
Now add the coconut milk and let this simmer. Add salt and pepper.
Garnish with chopped coriander.
This can be served with rice .
